Monsters AI - awaking.

Playing as a warrior with Z I have a high stealth (for now). Discovering another level I've spotted in open field a pack of sleeping orcs. Casting a stinking cloud (by rod) from corriddor (they didn't see me) I awoke them. And I wonder, how did they know where I was? They just run towards me.
If there are any other places to hide they should disperse and search for me I think.

I'm no expert, but here's my 2 cents. The AI is far from competent or realistic. If you are within a monsters 'detection range' then it knows exactly where you are regardless of walls, doors, or other obstacles.

In the *bands I've played, the enemy automatically knows where you are once awake (unless you have superstealth in an O-variant). Whether they can negotiate tunnels to find you depends on a few factors.

There are/were some terms in the code and options that explain the mystery: flow by smell and flow by sound. Both these ways of locating you are independent of sight. You are obviously too human-centric. Monsters don't use ASCII terminals.
