Been a while since I played. Last time I played when you picked up say 40 items of the same type it would stack but then wouldn't allow you to pick up more than 40 and ignore them. Now it starts a new stack in the inventory which I find annoying. Is there a way to turn this off? I mean I want say, scrolls of phase door, so I don't want to ignore them completely but I don't want so many that they take up two inventory slots. I mean, I could just not be aware of how but is there a way to say you only want a certain amount of a certain item and no more?

I, too, preferred the old way.

I believe if you inscribe '{' the item with =g40 that'll work.
